Ingredients:
- Moroccan Cous Cous - 150 gm (I use the flavored one, but you can use the regular one too)
- Green bell peppers - 2 , chopped roughly
- Cherry Tomatoes - 4, quartered
- Carrots - 3, cut length-wise and halved
- Fresh Thyme - 2 tspns full
- Garlic - 3-4 cloves chopped roughly
- Salt
- Olive Oil - 1 tspn
- in a heavy bottomed dish, heat up the oil and add in the garlic. Stir fry till cooked but not brown
- add in all the vegetables and cook for around 4-5 min.
- Add in the salt, half of the thyme and cook for another 1 min.
- meanwhile, in another bowl, add your cous cous and pour recently boiled water and leave it to cook for about 5 min.
- Now combine both the vegetable mixture and cooked cous cous and the remaining thyme.
