Guthi Vankaya Koora (Stuffed Brinjals)

Ingredients

Small Brinjals

Onions

Garlic

Red chilli powder

Turmeric powder

Salt

Coconut

  1. Slit brinjals with the stem jointed.
  2. Cut onions into small pieces and peel garlic
  3. Grind coconut, salt, redchilli powder, turmeric, one onion and few garlic pods to paste
  4. Mix the ground paste with cut onions and garlic.
  5. Stuff the mixture into brinjals.
  6. In a vessel, season with mustard and jeera.
  7. Arrange the stuffed brinjals and add little water.
  8. Cover it with a lit and pour little water over the lid. Sim and cook till the veggie get cooked.

Note:

  • If you want it to be a gravy add in little more water
  • Instead of cooking in a vessel, arrange the brinjals in a pressure cooker and cook till two whistles.
