Root Vegetable Summer Salad

Root vegetables Salad.
Ingredients:
1. Carrots- 1 carrot grated
2. Beetroot – ½ beetroot grated
3. Radish – 1 radish grated
4. Turnip – ½ turnip grated
5. Green Chillies – 2 – deseeded and chopped finely
6. Raw Mango – ½ grated
7. Olive oil – 2 tbspns
8. Lemon juice – 2 tbspns
9. Lemon zest – of 1 lemon
10. Yogurt – beaten – 2 tbspns
11. Coriander – a teaspoon full – chopped
12. Ginger – grated – 1 inch
13. Salt
14. pepper
Method:
1. Mix all the vegetables and green chillies in a big salad bowl.
2. There can be either two dressings or just one big dressing for this salad.
Dressing 1: The lemon juice, lemon zest and olive oil can be mixed in a separate bowl and just poured over
Dressing 2: The paste of ginger, coriander and green chillies mixed into beaten yogurt makes an excellent summer dressing!
3. Eat on a hot summer afternoon with chilled mango juice! 
