Vegetable Uttappam

Batter (1:4 ratio urad dal & rice) - 4 cups
Onion – 1 (thinly sliced)
Green chilies – 3
Tomato – 1 (chopped)
Carrot – 1 small
Capsicum – 1 small
Mint leaves – few
Coriander leaves – few
Cashew nuts – 5
Curry leaves – few
Oil – 3 tbsp.
Salt to taste

  1. Soak rice & urad dhal separetly for 4-5 hours. Blend them separately to smooth paste using enough water. Mix together and ferment it over night.
  2. Next day add salt and check for thickness. If it is too thick add some water.
  3. Chop onion, tomato, chilies & vegetables into small pieces.
  4. Now in a kadai head oil and add mustard seeds, curry leaves, green chilies & onion. Fry for few seconds. Then add vegetables and tomato. Keep frying for few mintues. When vegetables half cooked remove it from fire.
  5. Add these fried mixture with batter and mix well. Check salt & add mint leaves & coriander leaves. Again mix everything well.
  6. Now heat tawa and rub some oil on it. Pour some batter on it with ladle and make it as thick circle. Cook it and turn the other side.
Now Veg. Uttappam is ready.
Variation: You can mix the all the ingredients chopped and keep it separate without frying. Once plain batter poured into the dewa then sprinkle the vegetable mixture above the batter. After few mintues turn it on the side and cook it.
You can add all your favourite vegetables & nuts to this.
