Brinjal Fry

Need to prepare a quick curry.........

Essentials

Brinjals - Small ones (Violet)
Salt
Chilli powder / Garlic Chilli Powder
Oil

  • Remove the stalk. Slit the brinjals in the middle.
  • (One end of the brinjal should be intact.)
  • In a kadai, add few spoons of oil. Once hot, add the slit brinjals and fry them.
  • Once the skin changes colour and brinjal is cooked, transfer it into a bowl.
  • Mix salt and chilli powder together in a small cup.
  • Apply the chilli powder inside the brinjals according to your taste. Be cautious that one end is intact.

This tastes yummy with hot rice and ghee......
