Baby Brinjals - 10-12 pieces
Onion - 1 finely chopped
Tomato - 1 finelly chopped
Garlic - few cloves minced
Sour Curd - 1 tbsp
Oil - For shallow fry
Salt to taste
Parappu podi to taste(optional)
1.Wash brinjals and cut cross such that end dont part for stuffing.
2.Mix Chilli powder, corriander powder, turmeric powder, salt n parappu podi with curd.
3.Make a thick paste of it if necessary add more curd.
4.Stuff this paste in brinjals.If paste is left keep it aside for gravy.
5.Heat oil. Add onion, garlic and tomatoes.Fry for 3-4 minutes.
6.Add stuffed brinjals and left paste. add chilli powder, turmeric powder and salt to taste.
7.Cook for about 15 minutes until brijals are fully cooked
Serve hot with Chapathi or with variety rice.
