Summer Salad


Ingredients:

Iceberg lettuce – 4-5 leaves
Cucumber – 1, cut into medium sized cubes, seeds removed
French beans – 6-8, whole, the fibre removed, boiled for 2 min
carrot – 1 cut into medium sized cubes, also boiled for 2 min
Orange – 1, pips, seeds and fibre removed, cut into cubes

Dressing:

Olive oil – 3 tspns
Juice of 1 lime/lemon
Vinegar – 2 tspns
Salt, Pepper

Procedure:

In a large mixing bowl, first place the lettuce leaves, as a bed
Next, toss in all your vegetables and the orange.
In another small jug put all your dressings ingredients and make a well mixed liquid.
Pour the dressing over the vegetables, toss and sprinkle salt and pepper
Serve warm/room temperature
