Moroccan Mashed Pumpkin

A special take on pumpkin..


  1. Yellow Pumpkin - 200 gm
  2. Extra Virgin Olive Oil - 3 tbspn or 1/4 cup
  3. Salt
  4. Pepper
  5. Cumin Powder
  6. Nutmeg Powder
  1. Boil the pumpkin in the pressure cooker and then mash it well. You can use a fork and whip it for that delicious consistency
  2. add a pinch of salt, a tspn of pepper, a pinch of nutmeg powder and a pinch of cumin powder, and whip again
  3. add the olive oil and whip till everything emulsifies
  4.  smoothen it and keep it covered till u serve
a great lunch dish! Serve hot or at room temp!
